Crab Casserole:
2 Tbsp. butter
2 Tbsp. all purpose flour
1/4 tsp. salt
1/4 tsp. white pepper
1 c. milk
2 egg yolks, beaten
1 tsp. chopped chives or onion
1 tsp. dry mustard
1 tsp. Worcestershire sauce
1 c. crab meat
1/4 c. buttered bread crumbs
Melt butter in top part of double
boiler; add flour, salt and pepper.
Cook until bubbly. Slowly add milk,
stir briskly. Cook over hot water
until thick and smooth, stirring
occasionally. Continue cooking
for about 5 minutes.
Add egg yolks, then onion, mustard
and Worcestershire sauce. Stir in
crab meat. Pour mixture into 1-quart
casssserole dish. Cover with buttered
bread crumbs.
Bake at 400 degrees for 45 minutes.
