Wild Plum Tea

4 family size tea bags
2 qt.water
2 c sugar
2 c. orange juice
1/2 c. lemon juice
cold water

In a 1 gallon pitcher, steep tea bags
and 1 quart of hot water. Mix the remain-
ing quart of water and sugar: heat over
high heat until sugar is dissolved. Pour
over tea and water in pitcher. Steep 15
minutes. Strain out tea bags. Add orange
juice and lemon juice and enough water to
make one gallon.

Wild Plum Muffins

2 c. self rising flour
2 c. sugar
1 c. crushed walnuts
2 tsp. allspice
3 eggs
1 c. oil
2 small jars plum baby food

Stir together dry ingredients. Add eggs,
oil and baby food. Stir just until mixed.
Spray mini muffin pans with Pam. Fill
pans with batter. Bake at 350 degrees for
10 minutes. Yield: 8 to 10 dozen muffins.

Mississippi Mud Pie

4 eggs, beaten
2 c. sugar
1 1/2 c. all-purpose flour
1 tsp. vanilla extract
1 c. butter (2 sticks)
1/3 c. cocoa
1 1/2 c. chopped pecans
1 (6 1/2 oz.) bag marshmallows
1/2 c. butter, melted
1/3 c. milk
3 Tbsp. cocoa
1 (1 lb.) box confectioners sugar
1 tsp. vanilla extract

Combine the first 4 ingredients. In a saucepan, melt 1 cup butter and
add the 1/3 cup cocoa. Add the egg mixture and beat well. Add the pecans.

Bake in a greased 9 x 13-inch pan in a 350 degree oven for 25 to 30 minutes.
As soon as the cake is removed from the oven, cover it with marshmallows.
Return the pan to the oven until marshmallows are slightly melted.

Frosting: Combine 1/2 cup butter, 1/3 cup milk and 3 tablespoons
cocoa. Beat in the sugar and vanilla. Pour the frosting over the
marshmallows and cool before cutting. Serves 16.

Helpful Hint

When preparing a casserole, make an additional dish
to freeze, it makes a great emergency meal when
unexpected guests arrive. Just take the casserole
from the freezer and bake it in the oven.

Your guests will never know how easy it was to
prepare for them.

This Week's Featured Recipe - Cherry Snowball Cake

Delicious Cherry Snowball Cake

1--8oz pkg cream cheese
2 Cups confectioners sugar
1 (8 oz.) container cool whip
1 (16 oz.) can cherry pie filling
1 Large angel food cake

Cut angel food cake in small pieces.
Soften cream cheese with a fork.
Mix cream cheese, confectioners sugar
and cool whip together well.

Place 1/2 of cake pieces in bottom of large
baking dish. (Use a square or oblong dish)

Pour cream cheese, confectioners sugar and
cool whip mixture over cake pieces.

Place remaining 1/2 of cake pieces on top of
the cream cheese, confectioners sugar, and
cool whip mixture.

Pour the can of cherry pie filling, over the top
of cake pieces. Spread evenly, to cover all pieces.
Refrigerate, until ready to serve.

It looks real pretty, with some confectioners
sugar sprinkled over the top.

Welcome to my blog

My name is Norma and I live in Knoxville, Tennessee, at the foothills of the beautiful Great Smoky Mountains. I am a faithful football fan of the orange and white - Go Vols!
My blog will consist of favorite recipes from friends and family, helpful hints, and quote of the day. We have lots of fantastic cooks in this area and they love cooking, so this will be a great way to represent them - and a great way for you to try some Southern cooking! My mother is deceased now, but she was certainly one of those great cooks. She spent her life time in Virginia, where there are lots of good cooks, as well.

These recipes are so good, that I wanted to share them with you on my blog. I will be posting a different recipe each week, so please check back often. I hope you will enjoy the recipes as much as I enjoy posting them and sharing them with my readers.
