When Grandmother said to eat your
vegetables, she really knew what she
was talking about! Researchers at the
Johns Hopkins School of Medicine in
Batimore have isolated what they call
a "Chemoprotectant" for cancer from
a vegetable. (A chemoprotectant is a
substance which gives protection against
disease to those who eat it.)
Cruciferous vegetables, such as broccoli,
brussels sprouts, and cabbage have long
been felt to offer this protection. Now,
the specific substance in broccoli that
gives protection from cancer has been
identified. It is called sulforaphane.
Researchers say sulforaphane is possibly
the most potent cancer protecting agent
yet discovered! Molecular pharma-
cologist Paul Talalay reported, in the
"Proceedings ot the National Academy
of Sciences", on how the sulforaphane
in broccoli actually stimulates the body's
cells to produce cancer fighting enzymes.
This chemoprotectant remains in broccoli
after careful cooking. Studies have not yet
shown if, or how sulforaphane directly
blocks tumor formation, but researchers
feel the evidence is strong enough to
provide a scientific basis for including
vegetables like broccoli in the diet.

Recipe - for - Today
Honey Teriyaki Chicken
2 pounds boneless chicken
breasts
1/2 cup all purpose flour
1/2 teaspoon salt
1/8 teaspoon pepper
2 eggs, beaten
oil for frying
Glaze:
1/3 cup soy sauce
1/3 cup honey
1 tablespoon cooking sherry
1 clove garlic, pressed
1 teaspoon ground ginger
2 tablespoons sesame seeds
Cut chicken into bite-size pieces,
batter, and fry until chicken is
done. Combine glaze ingredients.
Heat until just beginning to boil
and reduce to low heat. Coat
chicken in glaze. Pour any
remaining glaze over chicken.
Serves 3 to 4.

Easy Recipe for Today
Impossible Coconut Pie
4 eggs, beaten
1 3/4 cups sugar
1/2 cup flour
2 cups milk
1 teaspoon vanilla
1/2 stick melted margarine
1 (7 oz.) angel flake coconut
Mix eggs, sugar, flour, milk, vanilla, and
margarine, beating well. Stir flake
coconut into this mixture. Bake at 350
degrees for 25 minutes or until golden
brown. Crust forms as the pie bakes.

Recipe for the Day
Peach Blush Wine Cake
1 box Duncan Hines white or yellow
cake mix
1 small pkg. peach Jello
4 large eggs, slightly beaten
1 c. oil
1 c. Smoky Mountain peach blush wine.
Preheat over to 350 degrees. Mix all
ingredients. Bake at 350 degrees in
greased and floured Bundt or tube pan
for 45 to 50 minutes.
Glaze: Combine peach blush wine with
powdered sugar to desired consistency.
Cake can also be baked in 2 (8 or 9 inch)
layer pans and frosted with your favorite
cream cheese frosting with pecans.

Roosevelt Will Ride Again
Gatlinburg, TN plans re-enactment
of former president's arrival to
dedicate Smokies 75 years ago.
People hoping for a modern-day New Deal will
come close at this year's Fourth of July parade in
Gatlinburg. The city is planning a re-enactment of
former President Franklin Delano Roosevelt's
ride through the city on his way to dedicate the
Great Smoky Mountains National Park on
Sept 2, 1940. The re-enactment also celebrates
the park's establishment.
"We are trying to tie this in as a salute to the
Great Smoky Mountains National Park's 75th
anniversary." Roosevelt's New Deal created
the park in 1934, and the newly formed Civilian
Conservation Corps began building infrastructure.
On Labor Day in 1940, Roosevelt delivered a
speech in Chattanooga, then drove through
Knoxville on his way to Gatlinburg. He dedicated
the park "with one foot in North Carolina and one
foot in Tennessee when he gave his speech."
