Smokey Mountain Breakfast

2 cups chopped smoked ham
2 cups grated chedder cheese
2 tablespoons Dijon mustard
1/2 cup mayonnaise
12 slices of sandwich bread
(really good with rye or sour
dough)
6 eggs
2 cups milk

In a bowl, combine the ham, cheese,
mustard, and mayonnaise. Make 6
sandwiches with the ham mixture.
Cut each sandwich in a big X making
4 small triangular pieces. Spray a
9 x 13 inch baking dish with non-stick
cooking spray, and place your sandwich
pieces into the dish, crust side down and
pointed end up (to form mountain peaks).

In another bowl, combine eggs and milk.
Pour it over the "mountain peaks", making
sure the bread has been saturated. You
can refrigerate overnight, or let it sit to soak
at least 30 minutes. If you refrigerate over-
night, take it out about 1/2 hour before
baking. Bake at 325 degrees for 50 to
60 minutes.

Japanese Chicken Salad

6 chicken breast halves
salt and pepper
1 small head iceberg lettuce,
(broken into pieces)
3 stalks celery, chopped
3 Tbsp. sugar
1 1/2 tsp salt
3/4 c. salad oil
1 1/2 Tbsp. sesame oil
5 tsp. vinegar
chow main noodles
1/3 c chopped cashew nuts, toasted
3 Tbsp.sesame seed, toasted

Season chicken with salt and pepper.
Wrap in foil and bake at 350 degrees
for 45 minutes. Let cool, bone chicken
and shred. Set aside.

Combine lettuce, celery and chicken in
large bowl. Refrigerate for several hours.
Mix sugar, salt, salad oil, sesame oil and
vinegar; store in refrigerator until serving
time. When ready to serve, toss lettuce
mixture with cashew nuts, sesame seed
and dressing. Top salad with chow mein
noodles and serve immediately. Serves 8.

Free Recipe - Angel Biscuits

5 cups self-rising flour
1 cup shortening
2 packages yeast
1/4 cup sugar
1 1/2 to 2 cups buttermilk
1/4 cup warm water

Mix yeast in water, set aside. Sift dry
ingredients and mix in shortening.
Add buttermilk and yeast mixture.
Mix well. Place in refrigerator for 1
hour before baking. Roll dough 1/2
inch thick and cut into biscuits using
a 2 inch biscuit cutter. Let rise 1 hour.
Bake at 450 degrees for 18 miutes or
until brown.

Delicious Cherry Snowball Cake

This recipe was one of my mother's
favorites. She always made it for
special occasions. Why not make
this for Valentine's Day?

1 8 oz. pkg. cream cheese
2 cups confections sugar
1 8 oz. container cool whip
1 16 0z. can cherry pie filling
1 large angel food cake

Cut angel food cake in small pieces.
Soften cream cheese with a fork, mix
cream cheese, confectioners sugar and
cool whip together well.
Place 1/2 of cake pieces in bottom of
large baking dish. (Use a square or oblong
dish) Pour cream cheese, confectioners
sugar and cool whip mixture over cake
pieces.

Place remaining 1/2 of cake pieces on top
of the cream cheese, confectioners sugar,
and cool whip mixture. Pour the can of
cherry pie filling, evenly over the top of
cake pieces. It looks really pretty, with
some confectioners sugar sprinkled over
the top.
Refrigerate until ready to serve.

The combination of flavors in this
~~~salad makes it a favorite!~~~

1 T. butter or margarine
1 T. brown sugar, packed
1/2 c. pecan halves
7-oz pkg. baby spinach, washed
1 Granny Smith apple, thinly sliced
1/2 c. crumbled blue cheese
3 T. olive oil
2 T. white vinegar
1/8 t. salt
1/8 t. pepper
Melt butter and sugar in a small skillet over
low heat, stirring constantly. Add pecan
halves, cook 2 to 3 minutes, turning to coat.
Remove coated pecans from skillet and cool
on wax paper.
Toss spinach, apple, cheese and pecans in a
serving bowl. Whisk oil, vinegar, salt and
pepper, drizzle over salad, tossing gently to

Chicken Jubilee

8 chicken breasts
1 bottle chili sauce
1 tsp. Worcestershire sauce
2 tbsp brown sugar
1 large can pitted dark cherries

Flour chicken and brown in oven at
400 degrees for about a half hour.
Make sauce of chili sauce, brown sugar,
worcestershire sauce and juice from
cherries. Heat sauce and pour over
chicken, saving half of sauce for basting.

Reduce oven heat to 300 degrees and
bake 1/2 hour longer, basting often.
Remove chicken to hot platter; add
drained cherries and 1/2 cup sherry to
sauce in pan. Heat about 5 minutes
longer.
