Recipe For Today
Monkey Bread:
1 cup milk
1 package dry yeast
1 stick margarine
3 1/2 cups all-purpose flour
4 tablespoons sugar
1 stick margarine, melted
1 teaspoon salt
Combine milk, 1 stick margarine,
salt and sugar in a saucepan. Heat
until margarine is melted. Cool
to approximately 105 to 115
degrees. Stir in yeast.
Place flour in large bowl, make
a well in flour and pour in liquid
mixture. Stir until blended,
cover and let rise until doubled
in bulk, about 1 1/2 hours. Turn
dough out on floured surface,
roll to 1/4 inch thickness. Cut
into 3 inch squares.
Dip each in the melted margarine.
Layer squares in 10" bundt pan.
Let rise until doubled in bulk.
Bake at 375 degrees for 30 to 40
minutes.
Serves 14

To freeze meatballs, place them
on a cookie sheet until frozen.
Place in plastic bags. They will
stay separated so that you can
remove as many as you want.
When making a roast, place dry
onion mix in the bottom of your
roaster pan. After removing the
roast, add 1 can of mushroom
soup and you will have a good
brown gravy.

Decreasing Your Fat Intake:
You can lower your cholesterol level
and decrease your risk of heart disease
by cutting down on your fat consumption.
Here are some ways:
Avoid fried foods; bake or broil.
Choose lean meats; cut off the fat before
cooking.
Avoid luncheon meats (hotdogs, bologna).
Eat sparingly of sausage and bacon.
Remove skin from poultry (before cooking
if possible).
Steam vegetables.
Use half the fat (oil, margarine, butter,
lard, shortening, mayonnaise) called for
in recipes.
Use less than 1 teaspoon margarine or
butter on bread, hot cereals, and vegetables.
Use low-fat salad dressings; limit other
salad dressings to 1 tablespoon.
Season with herbs, lemon, vinegar, onion,
garlic, and tomato products.
Thicken sauces, soups with a mixture of
corn starch (or flour) and cold water.
For snacks, choose fruit, vegetables, whole
grain bread/cereals/crackers.
Choose low-fat milk products such as
buttermilk, 2% fat milk, non-fat dry
milk power and skim milk.

2 tsp. cinnamon
1 1/2 c. vegetable oil
3 c. shredded carrots
4 eggs
1 c. pecans
dash of salt
Frosting: (Can be doubled)
1 box powdered sugar
8 oz. cream cheese
1 stick butter
2 tsp. vanilla
1 c. pecans
In large bowl, combine flour, soda,
baking powder, cinnamon, and salt.
In small bowl, beat eggs gently with fork.
In medium bowl, combine oil, sugar, eggs
from small bowl, carrots, pecans, and salt.
Stir by hand until mixed. Combine medium.
Combine medium bowl and ingredients in
larger bowl. Stir well.
Cook in 3 round pans 30 minutes or until
done in center. Cool and frost.
