Mexican Casserole

1 lb. ground chuck
1/4 c. chopped onion
1/2 c. chopped celery
2 tsp. chili power
1 (8 to 12 oz.) can whole
kernel corn, drained
1 (15 oz) can kidney beans,
drained
1 small can chopped ripe olives
1 (8 oz.) can tomato sauce
3/4 c. grated sharp Cheddar
cheese
3/4 c. coarsely crushed corn
chips
salt and pepper to taste

Brown beef; saute onion and celery in
pan as beef cooks. Season with salt and
pepper. In a 2 1/2-quart casserole dish,
combine remaining ingredients, add beef
mixture. Stir in half of the grated cheese.
Top with remaining cheese and the
crushed corn chips. Bake at 350 degrees
for 20 minutes or until bubbly and top
brown.

Grandmother's Meatloaf

2 pounds ground beef
2 cups evaporated milk
2 eggs
1 chopped onion
2 teaspoons salt
2 cups bread crumbs
2 bacon slices
1 can tomato soup
Mix all ingredients together (except
for the bacon, and tomato soup). Place
in a glass baking dish. Add 2 strips of
bacon across the top.
Pour the tomato soup, no water
added, over the top. Bake in a 400
degree oven for 1 hour.

Free Recipe of the Week

Lazy Man's Stuffed Cabbage

1 head cabbage, cut up fine
1 lb. ground beef
1 can cream of tomato soup
1 can cream of mushroom soup
1 medium onion

Brown ground beef and onion together
and season as you wish. Line bottom of
9 x 13-inch pan with half of cabbage.
Layer ground beef mixture on top. Then
cover with remaining cabbage. Mix the
two soups and pour over the top. Bake at
300 degrees for approximately 1 1/2 hours.

This recipe is easy, filling, tasty and
cheap! Also popular with everyone.

Seeds and nuts, both shelled and unshelled,
keep best and longest when stored in the
freezer. Unshelled nuts crack more easily

Jello Surprise - Recipe of the Week

2 4oz. pkg blueberry jello
2 cups hot water
1 8 oz. pkg cream cheese
1 16 oz. pkg sour cream
1/2 cup sugar
1 cup pecans
1 can blueberry pie filling
1 16 oz. can crushed pineapple

Dissolve 2 (4 oz.) packages of blueberry
jello in 2 cups hot water and then add 1
can crushed pineapple (with juice) and 1
can of blueberry pie filling and allow to set.

Mix 8 oz. of softened cream cheese, 16 oz.
sour cream, 1/2 cup sugar and 1 cup pecans.
Blend well and spread on top of set jello.

Oh, How I do Love Honey

Honey was much used by the women of
ancient Greece to moisten and heal skin
irritations. A small amount was rubbed
into the hands and legs in the early morning
and midafternoon. This treatment, advised
Hippocrates, would relieve discomforting or
undesirable chapping and redness.

Moisten the face with tepid water and
apply a thin coating of slightly warmed pure
honey. Also try a blend of egg white, warm
honey, and dry skim milk.
