Helpful - Hint

When shopping for red meats, buy
the leanest cuts you can find. Fat
will show up as an opaque white
coating or can also run through the
meat fibers, as marbling.
Although most of the fat
(the white coating) can be
trimmed away, there isn't
much that can be done about
the marbling. Stay away from
well-marbled cuts of meat.

Helpful - Hint

Use little oil when preparing
sauces and marinades for red
meats. Fat from the meat will
render out during cooking and
will provide plenty of flavor.
Certain meats, like ribs, pot
roast, sausage, and others can
be parboiled before grilling to
reduce the fat content.

Free - Recipe

Granddad's Corn Bread Dressing:

1 large skillet of corn bread
1 small skillet of corn bread
8 slices of loaf bread, crumbled
1 1/2 c. celery, chopped small
1 1/2 c. onion, chopped small
1/4 tsp. marjoram
1/4 tsp. thyme
sprinkle black pepper
pinch of sage
2 large eggs, beaten
broth from cooked turkey or
4-5 cans of chicken broth, as
needed.

Crumble all bread well, mix in celery,
onion and spices. Add egges and stir.
Add broth one can at a time until
mixture is pourable. Pour in baking
pans or skillets and bake at 350
degrees until light brown and no
longer soupy.

Free Recipe

Steak Ala Edwardo:

1/2 tsp. Italian herb seasoning
1 c. onion chopped
2 cloves garlic, crushed
1 Tbsp. green olive oil
2 (5 oz.) lean, New York cut steaks
2 Tbsp. Dijon mustard
1 c. Italian red wine

In a large frying pan, saute the Italian herb
seasoning, onion and garlic in oil for 3 to
4 minutes. Flatten the steaks and serrate
both sides with a sharp knife. Add the
steaks to the pan and brown over high
heat for a few minutes on each side.

Mix the mustard with the red wine in a
small bowl. Pour the mixture over the
steaks and cook over low heat for 3 to
5 minutes (depending on your preference).
Use a knife and fork to check the center
of the steaks for pinkness.

Serve immediately with the sauce poured
over the steaks

Variations: Add sliced mushrooms or
omit the mustard. Use veal, lamb, pork
or chicken instead of steak.

Cabbage Salad

Cabbage Salad:

4 lb. cabbage, shredded
4 c. sliced onions
1/4 c. sugar
1tsp. dry mustard
3/4 c. vinegar
1/4 c. canola oil
1 tsp celery seed
1 tsp. salt
1/2 c. concentrated frozen apple
juice

In a bowl, alternate layers of cabbage
and onions. Sprinkle sugar over
cabbage and onions. Set aside.

In a saucepan over medium high heat,
combine all remaining ingredients and
bring to a boil. Pour hot liquid over
cabbage mixture. Cover and refrigerate.
This will keep for at least 2 weeks and is
best after 2 or 3 days.


Helpful Hint

Do You? Need a "sitter" for your
house plants while you're away for a
weekend or for 2 weeks? They'll stay
fresh and healthy if you water each
plant thoroughly and cover it with a
reusable plastic bag. Fasten the bag
around the pot with a plant wire or
elastic band.

The water that condenses inside the
bag will suffice to conserve moisture
for the plant while you're away.
