Steak Ala Edwardo:
1/2 tsp. Italian herb seasoning
1 c. onion chopped
2 cloves garlic, crushed
1 Tbsp. green olive oil
2 (5 oz.) lean, New York cut steaks
2 Tbsp. Dijon mustard
1 c. Italian red wine
In a large frying pan, saute the Italian herb
seasoning, onion and garlic in oil for 3 to
4 minutes. Flatten the steaks and serrate
both sides with a sharp knife. Add the
steaks to the pan and brown over high
heat for a few minutes on each side.
Mix the mustard with the red wine in a
small bowl. Pour the mixture over the
steaks and cook over low heat for 3 to
5 minutes (depending on your preference).
Use a knife and fork to check the center
of the steaks for pinkness.
Serve immediately with the sauce poured
over the steaks
Variations: Add sliced mushrooms or
omit the mustard. Use veal, lamb, pork
or chicken instead of steak.
