Recipes In Bloom

ZUCCHINI CASSEROLE

3 1/2 c. diced zucchini (3 large)
1 large diced onion
1 1/2 c. sharp Cheddar cheese grated
1 tsp. oregano
salt and pepper to taste
1/2 c. vegetable oil
3 eggs
1 1/4 c. Bisquick (dry)

Mix all ingredients together.
Grease pan or casserole and bakc at
325 degrees for 1 hour or until golden
brown. This freezes well, if you have
any leftovers.
